Easy Asparagus (Stalk) Soup
With hopes to inspire the collective in helping alleviate the pandemic of food waste, we present this recipe utilizing the asparagus stalk we usually discard during food preparation.
While the branchier parts of the stalks are saved for making stock, the softer parts are used in this recipe to create another easy and flavorful meal.
This recipe is super convenient and only takes 15 mins to make, very delicious and packed with umami goodness from our ABO Miso Soup.
This is best enjoyed with some toast, or croutons, if you have it.

Ingredients
- 1 Tbsp butter
- Roughly 1 cup asparagus stalk, the softer parts only, sliced thinly (save the branchier parts for making stocks)
- 1 Tbsp ABO Miso Soup Original
- ½ cup favorite milk
- ½ cup water
- Salt and pepper to taste
Garnish with:
- 1 Tbsp of heavy cream, to drizzle on top (optional)
- Toasted bread or croutons (optional)
Directions:
- In a pot over medium heat, add the butter and sauté the sliced asparagus stalks.
- When the asparagus stalks start to brighten in color, add the miso paste and continue sauteing for a few minutes.
- Add the milk and water, and season with salt and pepper.
- Bring to a simmer for 2-3 mins and remove from the heat.
- Carefully transfer the soup to a blender and blitz until smooth. Alternatively, you may use a Bamix or hand blender to carefully blitz the soup on the pot. Serve on a bowl, with a good drizzling of cream on top, with a piece of toast or two, or croutons.
