Directions
- Preheat Oven to 400F.
- Peel carrots and place in a large baking dish. Toss in maple syrup, OKAZU, olive oil, salt, and pepper.
- Arrange carrots in a single layer and place in the oven for about 35-45 minutes, tossing halfway, until lightly browned and fork-tender.
- While carrots bake, prepare the yogurt sauce. In a food processor, add Greek yogurt, cilantro, lemon juice, garlic powder, ABO Miso Soup paste, salt and pepper. Blend until well-combined.
- Remove carrots from oven. Spread the yogurt sauce as the base in a serving dish and arrange the carrots on top. Garnish with some fresh cilantro and drizzle with OKAZU.
