Ingredients

  • One bunch carrots (small uniform size, if available)
  • 1 Tbsp maple syrup
  • 1 Tbsp olive oil
  • 1 Tbsp OKAZU
  • ½ cup plain Greek yogurt
  • ⅓ cup cilantro, chopped
  • 1 Tbsp ABO Miso Soup
  • ½ a lemon, juiced
  • ¼ tsp garlic powder
  • salt and pepper to taste

 Directions

  1. Preheat Oven to 400F.
  2. Peel carrots and place in a large baking dish. Toss in maple syrup, OKAZU, olive oil, salt, and pepper. 
  3. Arrange carrots in a single layer and place in the oven for about 35-45 minutes, tossing halfway, until lightly browned and fork-tender.
  4. While carrots bake, prepare the yogurt sauce. In a food processor, add Greek yogurt, cilantro, lemon juice, garlic powder, ABO Miso Soup paste, salt and pepper. Blend until well-combined.
  5. Remove carrots from oven. Spread the yogurt sauce as the base in a serving dish and arrange the carrots on top. Garnish with some fresh cilantro and drizzle with OKAZU.
