OKAZU Nori Kimchi Rice Cups

Here’s a fun way to use OKAZU Chili Miso and nori sheets to make an interesting and delicious meal or snack. This recipe is perfect to pack for a trip, picnics, or meal boxes!

Ingredients

  • 1 ½ cups cooked rice
  • 1 cup shimeji mushrooms, chopped
  • 1 spring onion, sliced (optional)
  • 1 sprig chives, chopped (optional)
  • ⅓ cup kimchi, chopped
  • 2 Tbsp soy sauce
  • 2 Tbsp honey
  • 1 Tbsp OKAZU Chili Miso
  • 2 pcs nori sheet, cut to quarters
  • ½ cup of favorite melting or baking cheese/s (may substitute with vegan cheese)

Garnish with:

  • Japanese mayonnaise
  • OKAZU Chili Miso
  • Roasted sesame leaves

Directions:

  1. In a bowl, combine the cooked rice, mushrooms, spring onion, chives and kimchi.
  2. Season with soy sauce, honey and OKAZU Chili Miso. Mix well until all the ingredients are well incorporated
  3. To fill each muffin slot, layer a nori sheet and scoop a good amount of rice mixture onto the tray. Then, add a good layer of cheese/s on top of the rice cups.
  4. Bake in a preheated oven (at max temp), for 6-8 minutes. Check on the 6 minute mark, to make sure the cheeses do not overcook, adding 1-2 minutes if necessary. It is ready when the cheeses have gratinated well.
  5. Garnish each rice cup with mayonnaise and roasted sesame seeds.
